25 Oct Banana Oat Muffins
These are a super quick, super easy, not so unhealthy, lunch box snack that my kiddies (and hubby) love!
Makes about 15 small muffins
2 large ripe bananas
200g rolled oats
260g plain Greek yoghurt
60g coconut sugar
1.5 tsp baking powder
1/2 tsp baking soda
Place all ingredients into a blender (blend on high until smooth) or thermomix (slowly turn up to speed 8, mix for 30 seconds)
Stir in 60g of shredded coconut and 80g of sultanas or choc chips (or add to thermomix and mix on reverse, speed 2 for 10 seconds)
Fill muffin cases until 3/4 full
Bake in a preheated oven on 180 degrees for 15-20 mins until golden on top.
